I mentioned in <b><a href="http://www.thespoonfulblog.com/">another blog post</a></b> that I read <b><a href="http://www.amazon.com/exec/obidos/ASIN/0062080903/dialost-20">this book, Dinner a Love Story by Jenny Rosenstrach</a></b>. Everyone of her recipes intrigued me. They are just adventurous enough for my cooking/eating style without being too intimidating. Last night I made her butternut squash soup. I loved it. Both of my children enjoyed it too. Capt. Steve was out with some friends, so he did not partake. But I'm calling this one a keeper.<br />

<br />
1 onion<br />
olive oil<br />
fresh thyme leaves<br />
salt<br />
pepper <br />
<br />
1 teaspoon curry powder<br />
pinch of cayenne pepper<br />
<br />
1 butternut squash, peeled and chopped (I used pre-cut Costco squash to save time)<br />
2 apples, peeled cored and chopped<br />

Chop onion and brown in olive oil. Add thyme, salt, pepper, cayenne pepper, and curry to taste. (Note: The original recipe calls for a tablespoon of curry. That was too much for my taste so I opted for a teaspoon. My advice is go easy on the spices. You can always add more at the end.)<br />
<br />
Add cut up squash and apple to pot. Cover with chicken broth. Bring to a boil for 30ish minutes. Puree' soup with immersion blender or regular blender. Add broth to bring to desired consistency.<br />
<br />
Top with sour cream or goat cheese crumbles. <br />

Today I share the basics of beans and rice. There is so much flexibility with this dish. It's hard to mess this meal up, I promise. For this batch pictured here, I just used up ingredients that were in my freezer and fridge. I always keep a stock of dried beans. <br />
<br />
<b>Ingredients</b> (not an exact recipe, most ingredients can be added to suit your taste)<br />
1 package of dried beans (red, navy, or great northern)<br />
diced onions and peppers (about a cup of each)<br />
meat for flavor (bacon, sausage, ham, or all three) This time I used sausage <i>and </i>ham.<br />
water (several cups)<br />

I start by "throwing in the crock pot" 1 package of dried beans, about a cup of diced onions (white and green) and a cup of diced peppers (bell peppers or sweet peppers). Then meat - sometimes I use ham, sometimes diced up raw bacon, and sometimes sausage. <br />

Next I fill the crock pot to the top with water and set it on low for 6 hours. About half way through I add a tablespoonful (or more) of Cajun seasoning and a small handful of dried parsley.<br />
<br />
Serve with some yummy bread from the bakery for dipping.<br />

I really enjoyed that post because I am/was coincidentally in the process of doing the very same thing. A couple of weeks ago when Stephen Small was staying the week at my parents' house, I did not darken the door of a grocery store. We ate what we had. The low point was when Stephen Grande came home one day for lunch and the most appealing meal was a plain hamburger patty (no bun) and some crumbly tortilla chips.<br />
<br />
It was worth making do because <b>I cleaned out my fridge!</b> I wiped it down and scrubbed all the shelves. I did the same for the pantry.<br />

Then we went out to dinner and left town early the next morning. <br />

When we got back in town I decided to go on a stocking spree. We were out of so many basic things like oatmeal, pasta, canned tomatoes. And since this month is cut short for us by two family trips, I decided that this was a good time to devote a large portion of our budget to staple items and groceries in bulk to go towards meals I have in mind. <br />

When choosing particular items I made sure I had a recipe in mind for the<i> near future.</i> I really stuck to my list.<br />

This whole method is really straying from my norm of once a week meal planning and grocery shopping. But given that September is a crazy month with traveling and the start up of school and church activities, it seemed like a good time to stock up and loosely plan for the whole month. <br />
<br />
I have $106 left to spend on groceries for the month of September.
But it should be plenty considering all the food I have in the house. I

I was extremely reluctant to join a big box store. For one, the store itself overwhelmed me. The thought of buying such large amounts of a product overwhelmed me too. I went several times just to look around before I actually joined. And then I went and bought some stuff with my sister just to see how those items would play out in my kitchen.<br />

I eased in to this decision. And now, after several months of shopping at Costco I can honestly say I'm thrilled with the store. We have the exact same grocery budget that we had previous to joining, but I feel like we have more food. Also their are certain products that I'm able to afford there that I feel are way out of my price range at the regular grocery store i.e. good cheese.<br />

I have friends with no children who shop at Costco and love it. But I feel it's only been practical since we have 4 mouths to feed and can throw back a 1/2 gallon of milk in less than 12 hours. I guess it just depends on who you are and what you buy. <br />

notes: Tuesday I <i>baked </i>the eggplant instead of frying it in oil, which is so much easier and still good. Saturday Stephen smoked the pork loin. For the hashbrown casserole I used cut up potoatos b/c I had some I wanted to use up, and I omitted the cream of chicken soup. Sunday we had a Sunday school class lunch, so that night I left open to just "make do". We ended up eating fried eggs, bacon, and leftover hashbrown casserole. Loved all the new recipes I tried and will make them again.<br />

It was a bigger than usual cooking week because I had completely emptied my deep freezer. I'm in the process of starting over. Which is fun, but also a lot of work!<br />

I'm currently making a big ol' pot of black beans for burritos tonight and some to freeze for the future. Also, I'm making vegetable soup from the leftover vegetables I've saved this summer. I decided to go ahead and make it this week since it's pleasantly cool for August - and I'm ready to get the gallon size ice cream tub full of vegetables out my regular freezer. All my shopping is behind me because I got it done over the weekend and the meals I chose are less fussy than last week's. Also, I have Wednesday night off because of church. So yay! My motto remains "just do it" when it comes to meal planning. It doesn't have to be perfect but it does have to get done! <br />

It confirmed my belief that homemade salad dressing is the way to go. It's trouble. It's work. But work that in most cases and definitley in this case is well worth the effort. <b>Pork Tenderloin</b><br />
recipe adapted from <a href="http://www.seasonedtotastecookbook.com/">Chattanooga Jr. League cookbook.</a><br />
<br />
Marinade<br />
1/2 cup soy sauce<br />
1/4 cup cooking sherry<br />
1/4 cup brown sugar <br />
1 clove minced garlic or 1 teaspoon of jarred garlic<br />
freshly ground black pepper to taste<br />
<br />
Marinate 2 pork tenderloins in marinade for at least 2 hours (or longer if you can). Then cook in oven 400 degrees for 30 minutes. Remove from oven. Let rest and slice thinly.<br />
<br />
<b>Pasta Primavera</b><br />
<br />
(Sorry, no exact measurements on this one. Use your better judgement and taste buds.) <b><br /></b><br />
green onions, diced<br />
red pepper, sliced<br />
yellow pepper, sliced<br />
asparagus, diced<br />
frozen peas<br />
garlic<br />
olive oil<br />
pasta, fettuccine, linguine, whatever - cooked of course<br />
fresh Parmesan cheese <br />
<br />
With the stove on medium heat, in large skillet or pot, sauté diced green onions and peppers in olive oil until tender, lower heat and add garlic. Slowly increase heat and add chopped asparagus and peas. Season with salt, pepper, fresh herbs, whatever you like. Once vegetables are thoroughly heated add cooked pasta to the mixture. Toss. Serve. Top with fresh Parmesan cheese.<br />

I did not make my own icing. I used store bought whipped vanilla. Also, I used two different kinds of sprinkles because it's what I had on hand.<br />

What I loved about these cupcakes:<br />

1. The recipe makes a perfect 12, which is the perfect amount for our family.<br />
2. They are from scratch. The cake is so real tasting and not too sweet.<br />
<br />
In the comments on the original recipe, there was quite a bit of negative feedback. But I disagree. These were a hit in my book. So what's new in food news? Not much. We are still eating, but I have not tried anything new lately.<br />
<br />
In November I sorta got on a health kick. I made lots of smoothies and popcorn. Dinners have been really simple. We eat pizza most every Friday night. <br />
<br />
One new thing I've been doing is buying whole (or half) hams. This is so economical. A pound of Boar's Head ham is approximately $9 at the deli. On sale, a 7 lb half ham is $12. And I only buy it on sale. Granted it is a totally different product than Boar's Head, but still -<i> it's ham.</i> I use it for sandwiches and in soups. And you get a ham bone (also known as a soup bone).<br />

First, cut out core of a bell pepper and dice into rings. <br />
<br />
Then heat cast iron skillet to medium heat. Spray with Pam or any kind of non stick spray. Place pepper ring in skillet and cook on both sides for 1-2 minutes until slightly tender. Next, carefully crack egg over pepper. It's okay if it runs out a little under the side. Allow egg to cook until your heart's content. You may need to cover skillet with a lid to help the process along.<br />

I enjoy mine with a little side of salsa. Oh my stars...you will love these eggs.<br />

When I asked him for the recipe he told me there really wasn't one- just a little of this and a little of that. But he gave me a little run down of how he made this goodness come together.<br />

I used <a href="http://thepioneerwoman.com/cooking/2011/01/beef-stew-with-beer-and-paprika/">the Pioneer Woman's recipe as my model to cook and assemble this stew</a>. The only difference in mine is that I added a lot more vegetables, liquid, and beef bullion. Sorry for a lack of specifics but PW explains the process so well. I basically cooked the meat and veggies in batches, sauteing them in a big pot, setting them aside - and then finally putting them all together in the pot and pouring in liquid. <br />

All I did was make grits in chicken broth according to package directions, then I added desired amount of cheeses. <br />

Preheat the oven to 350. Separate pita. Spread hummus on one side of the pita. Then layer carrots, tomato, cucumber, spinach and cheese. Since I only had grated Mozzarella, I melted it open face until it melted and then put it all together to go back in the oven for a little while. Total oven time approximately 10 - 12 minutes. <br />

Cut in half and serve with popcorn.<br />

I can't remember the exact proportions I used, but here is the list of ingredients and some general instructions. You can adjust to how you like it. <br />

diced celery<br />
diced onion<br />
diced carrot <br />
frozen green beans<br />
frozen corn<br />
diced canned tomatoes<br />
chicken or beef broth<br />
garlic<br />
vegetable oil <br />
salt<br />
pepper<br />
<br />
In a large pot, on medium heat saute celery, onions, and carrots in a little vegetable oil until tender. Reduce heat, add minced garlic. Pour in broth and tomato juice. Add remaining ingredients. Simmer on stove for 30 - 45 minutes until all vegetables are cooked.<br />
<br />
Top with a little cheese. <br />

makes 1 large loaf or two mini ones<br />

1/4 cup butter softened {1/2 stick}<br />
1/2 cup sugar<br />
1 egg<br />
1 cup quick oaks {I used old fashioned b/c it's what I had.}<br />
2 tablespoons water<br />
3 ripe bananas<br />
1 cup white flour<br />
1/2 cup whole wheat flour<br />
1/2 teaspoon salt<br />
2 teaspoons baking powder<br />
1/2 teaspoons baking soda<br />
1 teaspoon vanilla<br />
1/2 cup raisins<br />
1 cup chocolate chips<br />
<br />
Mix all ingredients. Pour into greased loaf pans or muffin tins. I used mini loaf pans {my fave}. Bake at 350 degrees until fork comes out clean. Approximately 45 minutes to 1 hour. Less time if making muffins. <br />
