Frozen Burritos

This is an idea, not an exact recipe. FROZEN BURRITOS.

First, I started by cooking some diced onion and peppers on the stove.
In a separate pot, I made a little Spanish rice. Then I mixed it all together, and threw in some black beans.


I next placed a serving of the rice/bean mixture on a large flour tortilla and added some grilled chicken and cheese.


Then I pretended I was at Moe's and wrapped the burrito up nice and tidy.


And then I wrapped it in individual pieces of foil.


Some I made with jalapenos.


And some with just beans and rice, no chicken.
The possibilities are endless.

Freeze!


When ready to serve, warm in the oven {with tin foil still on} for 40 ish minutes on 375 to 400 degrees. Serve with salsa and sour cream.

We have enjoyed these the past two times we have come home from long road trips. It's perfect because 1- we had no food in the house 2- we hated get back in the car to go get food and 3- they are GOOD.

Make them however you like. Chicken, beef, beans, cheese....I don't care.

  3. Such a great idea! We LOVE mexican food. I have a black bean and rice burrito recipe I make. I'll have to freeze some of the extra's because there is always a TON leftover. Thanks for the tip!

  4. We LOVE these! The Engineer has enjoyed them many times for lunch at work! I like to squeeze some lime juice in them, too.

  5. you are so clever! thanks for the idea - and for the tip about returning home from vacation. It's so true that there needs to be SOMEthing to eat in the house, and not junky road food either. Something real.
