Beef Stew Over Cheese Grits

About this time last year we were visiting my parents and my daddy served us the most unforgettable meal - beef stew over cheese grits. When I asked him for the recipe he told me there really wasn't one- just a little of this and a little of that. But he gave me a little run down of how he made this goodness come together.

So here's the jist of it....

Ingredients for the stew
2 packages of stew meat {comes already diced and packaged in the beef section of the grocery store}
1 yellow bell pepper
1 red bell pepper
1 orange bell pepper
1 large onion
5 carrots
2 baking potatoes
4-5 yellow squash
1 large container whole white mushrooms
beef bullion
several cups of water
1 beer {I used Bud Light}
Worcestershire Sauce
a little paprika
salt
pepper


I used the Pioneer Woman's recipe as my model to cook and assemble this stew. The only difference in mine is that I added a lot more vegetables, liquid, and beef bullion. Sorry for a lack of specifics but PW explains the process so well. I basically cooked the meat and veggies in batches, sauteing them in a big pot, setting them aside - and then finally putting them all together in the pot and pouring in liquid.


Ingredients for the cheese grits
quick Cooking Grits
cheddar cheese
cream cheese
chicken broth

All I did was make grits in chicken broth according to package directions, then I added desired amount of cheeses.

The stew makes approximately 10-12 servings. So I made grits for 10-12. We ate it for several meals and shared half with a friend with a new baby.
