Matchstick Carrots in Spaghetti

Stephen Small dislikes veggies. He's more of a Dorito and Tater Tot kind of guy.

I guess that's where my job as his mother comes in -- to ensure that he eats a decent nutrient once in a while.

This is my latest antic -- matchstick carrots in spaghetti. I throw them in when I'm cooking the onion.


It doesn't take much to give me a thrill :)

  1. i have a husband that won't eat any veggies (his idea of a salad is iceberg lettuce with a gallon of buttermilk ranch on it!) so i invested in the Deceptively Delicious Cookbook by Jerry Seinfeld's wife. it is all it's cracked up to be, AND MORE!!!! it's all recipes that hide veggies so kids (and husbands) don't know they are in there!

  3. yes, I realized that junk food is grandma and aunt territory. sighhhh

    I actually don't believe in totally hiding veggies, but I put veggies in a lot of things. Cauliflower in mac and cheese is a good one too. And I've found my children adore any pureed soup - so I puree leftover veggies with some appropriate liquid and heat it up.
