These are so yummy and this is how you make them:
First, cut out core of a bell pepper and dice into rings.
Then heat cast iron skillet to medium heat. Spray with Pam or any kind of non stick spray. Place pepper ring in skillet and cook on both sides for 1-2 minutes until slightly tender. Next, carefully crack egg over pepper. It's okay if it runs out a little under the side. Allow egg to cook until your heart's content. You may need to cover skillet with a lid to help the process along.
I enjoy mine with a little side of salsa. Oh my stars...you will love these eggs.
