Roasted Red Cabbage

My mom came up with this idea. She was inspired by Ina Garten who says you can roast any vegetable.

Ingredients:

1 red cabbage diced into strips
extra virgin olive oil
salt
pepper

Spread diced cabbage out on a cookie sheet and lightly coat with extra virgin olive oil. Then roast in oven on 350 degrees for anywhere from 20 to 30 minutes. Remove when some of the smaller pieces appear a little blackened and crispy. Add salt and pepper to taste before serving.

This dish is easy, colorful, inexpensive, and tasty! Try it and let me know what you think!

  1. I did! I used white cabbage, so not as pretty. I couldn't remember your exact directions, so I roasted it at 420 for about 30 minutes. In my opinion, it could have gone longer yet - was just starting to get that glorious caramelized roasted flavor. I roast all kinds of vegs: broccoli, sweet potatoes, turnips, beets, asparagus. All yum.
