Nell's Caviar

This recipe is often dubbed black eyed pea salsa, Mississippi Caviar, Texas Caviar, or {enter whatever state you are from} Caviar.

I prefer to call it Nell's Caviar because my friend, Nell, introduced me to this AMAZING appetizer. We were mere college gals then, and I have so many fond memories of making this salsa pea dish....and of course every time I do I think of Nell!


2 cans of black eyed peas, drained and rinsed
1 can of hominy or corn, drained
2 medium tomatoes diced
4 green onions diced
1/2 medium {regular}onion diced
1 green bell pepper diced
diced jalapenos to taste {fresh or pickled}
dash of garlic powder to taste
Italian dressing

Mix all ingredients together in a large bowl. Douse in Italian dressing over night {or several hours at least}. Drain and serve with tortilla chips!  It will be the love of your appetizing life!

Also, it should be noted that the Nell's Caviar picture above was made by none other than my beloved husband. As numerous complements started rolling in..... I love this dip, Oh wow this is good!, Ole Capt' Steve would shout out a confident "I made it!" He would also like me to note that he added a generous amount of freshly ground black pepper, his personal touch.

Pretty soon he's going to be petitioning me to change the name to Capt' Steve's Caviar.

  2. Mmmmm, this is one of my favorites! This also takes me back to college, when I first learned how to make this deliciousness. It's full of vegetables, so I've convinced myself that it's okay to eat mass quantities. That's true, right?? :) Thanks for sharing, SB!
