Salmon with Dill Caper Sauce

Sorry, if you don't like salmon or mayonnaise, this meal is not for you. Come again another day.

It is a favorite at our house. I serve it with white rice cooked with butter and a little chicken bullion and roasted brussel sprouts (post coming soon).

Ingredients for salmon:
salmon filets
butter
salt
pepper

Place foil on a cookie sheet (for easy clean up). Place salmon on sheet. Season with salt and pepper to taste and top with little dabs of butter (as much or as little as you like).

Cook at 400 degrees for 30 minutes for larger pieces of salmon. For smaller, maybe only 20 or 25 minutes. Use your best judgment. I cook the fish with the skin on. It easily comes off when done.


And now for the fabulous dill caper seafood sauce, a recipe from one of my favorite cookbooks, Come On In. This REALLY is what makes the meal.

Ingredients:
1 cup mayonnaise
2 Tbs Dijon mustard
2 Tbs capers, drained
1 Tbs fresh lemon juice
1 Tbs dill

Combine, refrigerate, and serve with salmon. It goes great with any seafood! You could easily half this recipe being that it makes a lot of sauce. A little dab will do ya. Or if you are like my husband a big dab will do ya.
