Roasted Brussel Sprouts

Brussel sprouts have a bad reputation. I think that is very unfortunate because these cute little cabbages are DELIGHTFUL when roasted.


I serve them as a side to my salmon. And the beauty of this combo is they cook at the same temp (400 degrees) for the same amount of time (30 minutes).

Ingredients:
Brussel sprouts (buy in produce section, about one handful per person)
Extra Virgin Olive Oil
Course salt
Pepper (freshly ground is preferable)

Spread sprouts on cookie sheet. I always cover sheet with foil first for easy clean up!

Coat with olive oil.
Salt and pepper to desired taste.

Roast in oven on 400 degrees for 30 minutes. About 15 minutes into cooking, remove from oven and turn them with a spatula, just give them a little shove around. This assures that they cook up nicely on all sides. When done they will be a little blackened and crispy on the edges.


It is also good to grate some fresh Parmesan cheese on top.

Seriously, try them. You will be shocked. Easy. Good. Green.
