Blue Cheese Burgers

Over the weekend, we were feeling burgers but wanted something a little different from our all time favorite Captain Steve burgers.

So blue cheese burgers it was. And eggplant sticks instead of fries.


Burgers

Ingredients:

1 lb ground beef (makes about 4 to 5 burgers)
Worcestershire sauce
whole wheat buns
crumbled blue cheese
red onion
tomato
lettuce
mayo

Instructions:

Add a dash of Worcestershire sauce to ground beef, enough to taste. Form patties and grill burgers like you would any other burger. Pile on blue cheese immediately after taking off the grill so it will melt nicely on your beef. Then dress your bun with a little mayo, onion, lettuce, tomato and there you have it!

Eggplant Sticks


Recipe modified from recipe in Come On In

Ingredients:

1 small to medium eggplant
1 tsp sugar dissolved in ice water

1 egg
2 tsp water
(mix together, beat egg)

3/4 cup plain cornmeal
3 Tbs all purpose flour
2 tsp salt
1/4 tsp black pepper
1/8 tsp cayenne pepper
(mix together)

Instructions:

Peel eggplant and dice into french fry sized sticks. Soak in ice water for 30 minutes. Drain. Coat in egg mixture and then cornmeal mixture. Place on an oiled cookie sheet and bake at 425 degrees for 15 + minutes until sticks are nice and golden brown. Flip once about half way through cooking process. Excellent dipped in ketch-up or ranch dressing.

  2. I absolutely love blue cheese burgers, so the next round of burgers will be this recipe! Eggplant sticks sure do seem to round out the palette, so this is one round dish to definitely try.
