This meal idea was inspired by a recipe on the back of the hummus package. I added a few ingredients to turn it up a notch.
Original hummus was the flavor I used.
flat bread, pita, or wrap
hummus, flavor of your choice
chicken, marinated in Italian dressing and grilled
diced Calamata olives
Italian salad dressing
Heat flat bread in microwave for 25 seconds. Spread desired amount of hummus onto bread. Layer lettuce, tomatoes, olives, cucumbers, and grilled chicken. Add a splash of Italian dressing if desired.
We've had this meal twice for dinner these past couple weeks. Cold food on a hot night is fantastic.
