Bibba's Pumpkin Spice Cake with Cream Cheese Frosting

My cousin Bibba is quite a wonder in the kitchen, especially when it comes to baking. She's the cousin that made Stephen Small's precious and unbelievably delicious first birthday cake.

This Pumpkin Spice cake is her recipe. I'm pretty sure she made it up. It's easy. And very good. And it only has 5 ingredients.


1 box spice cake
1 can 15 oz can pumpkin
1/4 cup milk
1 egg {I add an egg, but I think Bibba's original recipe did not include one.}

store bought cream cheese frosting

Mix ingredients thoroughly and pour in greased 9 X 13 baking dish. Bake at 350 degrees for 25 - 30 minutes. Remove from oven when you can stick a fork in center and have it come out clean. Allow to cool and then add frosting.

*tip - heat icing in microwave for 15-20 seconds and it will go on smoother and easier.

Serve with glass of milk.
