I stole this idea from one of my favorite little spots in town to grab a bite to eat. They have this amazing sandwich called the 5 Star Veggie. I assure you that each one of those stars is well deserved. It is tasty and hearty and light all ate the same time.
Today for lunch I decided to make a knock off version.
spinach * not on the original recipe.
Preheat the oven to 350. Separate pita. Spread hummus on one side of the pita. Then layer carrots, tomato, cucumber, spinach and cheese. Since I only had grated Mozzarella, I melted it open face until it melted and then put it all together to go back in the oven for a little while. Total oven time approximately 10 - 12 minutes.
Cut in half and serve with popcorn.
Basically this sandwich rocks.
