I made this little tortilla pizza for lunch one day. It was the perfect way to use up a little spinach and leftover tomato and caramelized onions. I gave mine a Mexican flair with pickled jalapenos, salsa, and sour cream.
Simply place a tortilla on tin foil. Top with your desired ingredients. Place foil directly on oven rack and bake at 400 degrees for 10 or so minutes. And there's a meal!
This would be great using black beans, corn, or any leftover vegetable.
