Diet Soup

I've mentioned once before that I'm trying to shed the remainder of my baby poundage. This is a good, healthy, satisfying soup that my mom told me about.

Essentially it is tomato juice, chicken or beef broth, and tons of vegetables. I put a little Mozzarella cheese on top. I'm not trying to starve myself ;)


I can't remember the exact proportions I used, but here is the list of ingredients and some general instructions. You can adjust to how you like it.

diced celery
diced onion
diced carrot
frozen green beans
frozen corn
diced canned tomatoes
chicken or beef broth
garlic
vegetable oil
salt
pepper

In a large pot, on medium heat saute celery, onions, and carrots in a little vegetable oil until tender. Reduce heat, add minced garlic. Pour in broth and tomato juice. Add remaining ingredients. Simmer on stove for 30 - 45 minutes until all vegetables are cooked.

Top with a little cheese.

Freezes well.
