Protein Bites

My sister in law recently shared her recipe for protein energy bites. I eagerly whipped up a batch and the verdict is.... we love them! These have been such a yummy, satisfying snack. I having been having one or two with my coffee every morning, and my kids having been having them for an afternoon snack.


1 cup dry oatmeal
1/2 cup peanut butter
1 cup coconut flakes
1/3 cup honey
1/2 cup wheat germ or flax seed
1/2 cup chocolate chips
1 tsp. vanilla

Mix. Chill mixture in fridge for 30 minutes. Roll into 1.5 inch bites.
Store in fridge in ziplock bag.
