This is a shout out to all you Mississippi Deltans. I call this a Doe's salad.
The very popular Doe's Eat Place in Greenville serves the simplest, yummiest salad consisting ice burg lettuce, tomatoes, and red onion with a lemon-oil-garlic-salt salad dressing. The bowl they make it in has been seasoned for decades. There is no way to truly imitate this salad, but this is a close second.
lettuce, {This pictured here happens to be greenleaf, but pick any lettuce you like, no certain amount...just enough for the number of servings you need.}
tomato
red onion slices
1 clove garlic
lemon
olive oil
salt
Cut garlic clove in half and rub bowl liberally. Then add your cut up and washed lettuce. Pile on the diced tomatoes and thin slices of red onion. Next, carefully squeeze a little bit of fresh lemon juice over lettuce. Then drizzle with good olive oil. No certain amounts here...just use enough to thoroughly coat all the lettuce. Be cautious with the lemon because you don't want to over do it. Lastly... toss, add salt to taste, and toss again.
This salad is easy, good, and is in line with my resolution to not buy store bought salad dressing.
